Ndaro-ini AA is Prolog's¬†first Kenyan coffee from the 2021/22 harvest and this one iscsurely¬†the freshest of the season. The farmers who provide cherries to the Ndaro-ini Factory have the benefit of perfect climatic conditions meaning the cherries have an extended time to reach maturity and be fully developed, this helps assist in producing hard, dense beans. The result of these conditions is an extremely sweet and¬†juicy cup, and we experience vibrant berry and red currant notes in¬†the cup.
The coffee is fermented for 16-24 hours under closed shade. After fermentation the coffees are washed with local spring water and again graded by density in wash¬≠ing channels and are then soaked under clean water from the Gatomboya stream for 16-18 hours.
This level of detail in the washing process gives a delightful level of flavour clarity and a clean fruit-forward finish, can be enjoyed as filter coffee or espresso.
