Amazonas is the second coffee in the series of two that we have from the Caballero family in Honduras this year. You can expect an extremely complex and elegant cup of coffee. Amazonas is grown on a part of the farm with higher elevation. This provides a slower growth cycle for the coffee plant which prolongs the bean development, resulting in a coffee with more complex sugars and compelling flavours.
Everything they do at the farms is documented, and they invest considerable time and resources both in new equipment and planting of new coffee varieties in order to improve the quality of the coffee.
The Caballeros are extremely committed to the environmental sustainability of their farms. A lot of their energy and focus goes towards improving the soil of their farms to ensure a healthy growing environment for their coffee shrubs. Therefore, they produce organic fertilizer made from cow and chicken manure mixed with pulp from coffee cherries and other organic material
Marysabel and Moises has always focused on quality, leading to numerous selections in in the 'Cup of Excellence' over the years. This can be thought of as the 'oscars of coffee', where producers are recognised each year at the national level for producing the highest quality coffee lots.
We have omni-roasted this lot, which means it can be preferred just as well as filter coffee, or as espresso.
