


This lot of Bourbon coffee underwent Yellow Honey processing. What this looks like in practice is that, after harvest, ripe cherries are pulped and the sugary, mucilage layer is left intact on the coffee beans. Pulped coffee is then spread in a thin layer on raised drying beds with full sun exposure, and then is moved to ensure consistent drying. Coffee is dried for 20-25 days, depending on weather, until it reaches the ideal humidity. All of this meticulous work in the processing, results in a cup profile which is both elegant and well balanced. Experience juicy, sweet orange and hazelnut with a smooth and creamy mouthfeel.
